As the Valentine’s Day is approaching, we want to share with you an interesting recipe. A “Heart Cheesecake” for you and your beloved people. We hope you enjoy it!
You will need:
- 50 g butter melted
- 100 g digestive biscuits , made into fine crumbs
- 100 g of Philadelphia cheese , or other full-fat soft cheese
- 50g golden caster sugar
- 1½ tsp vanilla extract
- 1½ tsp lemon juice
- 1large egg , plus 1 yolk
For the crust:
Melt the butter in a pan. Stir in the biscuit crumbs and sugar so the mixture is evenly moistened. Press the mixture into the bottom of the pan and bake for 10 minutes. Cool on a wire rack while preparing the filling.
For the filling:
Heat oven. Beat cream cheese, sugar, and vanilla in a large bowl on medium-high speed until smooth. Add egg and yolk, one at a time, beating after each addition, until smooth; stir in cream. Pour filling into pan, and bake until top begins to brown, about 15 minutes. Reduce heat to 160°, and bake until just set, about 1 hour. Transfer to a rack, and let cool completely. Cover and refrigerate at least overnight. Remove cake from pan and cut into slices to serve with blueberry.
