Guinea Fowl.


You will need:

  • 2 guinea fowl
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground salt
  • 1 tsp ground melt butter
  • 2 tsp red wine
  • 1 tsp sugar
  • 2 caramelized apples


Put the guinea fowl in a  dish, Mix together the marinade ingredients and pour over. Leave for a couple of  2-3 hours.

Heat the oven to 190C (gas).  Put the guinea fowl on a roasting tray skin-side up and pour with the melted butter.Cook for about 20 minutes until crisp, golden and cooked through. Chop into quarters (leave on the bone) and serve with caramelized apples.


Ice with berries,lemon and mint.

Freeze berries, slices of lemon, fresh mint in the form of ice.Leave freez for night.Serve them with a light wine or mineral water.
